其實「火車頭」是越南話,即是越南湯河,湯底濃而不濁的牛骨上湯,大大碗的湯河鋪滿生牛肉,湯底用老火牛骨湯,在骨湯中更放入磞砂腩,湯底鮮味十足。上檯時將新鮮的牛肉鋪在粉上,再淋上熱騰騰的牛骨湯,食時放入檸汁 、金不換及泰辣等,相當惹味。

剛做了一醬爆肉丁吃吃﹐ 挺有成就感的。 Jan 7, 2007

做法﹕ 土豆4個(個小的得8個)﹐切成丁。備用。
黃瓜一條﹐ (個小的得兩條)﹐切成丁。備用。
五花肉一磅﹐切成丁。用醬油(老抽) N 茶匙﹐料酒N茶匙﹐食鹽若干﹐白糖若干﹐味精N克﹐把肉渨半小時﹐備用。

把上述三丁分別油炸﹐炸熟了為止。

把天府牌甜面醬放鍋裡炸﹐N秒鐘後把上述已過油的三丁放在鍋裡攪拌N秒鐘後出鍋。

哇塞﹐ Cannot hold back my saliva. 香噴噴﹐ 好吃又好看。
