I know what you mean, pk. Many people in the Northeast part of the country, regardless of ethnic background, take the celebration of Saint Patrick's Day pretty seriously. Some would put on a green-colored piece of clothing, such as a tie, a hat, a shirt, or a sweater, etc. While I was in New York, a group of us coworkers used to always go out for lunch and have the traditional corned beef and cabbage. A few guys would definitely not miss gathering at local watering holes after work.

It's a little different here in Texas when it comes to observing this holiday. Perhaps it's because there's not a big concentration of the Irish population? Or maybe it could be because of Texan's frontier spirit? I'm not sure. We do have a lot of German descendants in the nearby town of New Braunfels who celebrate the local Oktoberfest religiously though.

四川家家都能作,到四川回锅肉不能不吃。
(一)
猪后腿的二刀肉370克,青蒜(青椒、黄蒜台亦可)70克,大油25克,面酱12克,酱油,料酒各12克,白糖5克,豆瓣酱、葱各5克,味精3克。
(1) 将肉切成4厘米宽的条,用开水煮熟改切成片,青蒜切成寸段。
(2) 将白肉先下入热油中煸炒至肉出油卷起,即加入豆瓣酱、面酱炸出味后下青蒜和其它各种调料,再翻炒几下即成。
(二)
用料:五花肉(肥:瘦=3:2、带匹)、郫县豆瓣、料酒、花椒等
配菜:蒜苗/青椒
1、将鲜肉煮至八成熟
2、将煮过的肉切片
3、烧油
4、油开后,下郫县豆瓣,用大火炒至有香味溢出
5、下切好的肉片炒至肥肉部分变小、打卷
6、下配菜,炒熟即可

无铅松花皮蛋
我国皮蛋生产的历史悠久。清人王士祯《食宪鸿秘》,对蜀中松花皮蛋制作早作过详细介绍:皮蛋用盐、炭灰、麦秸、柏枝灰拌合成泥,涂抹蛋上,一个月可食。阆中松花皮蛋的配方,基本上与《食宪鸿秘》无多大差异,但与京津及江南各地用“浸液法”生产的松花皮蛋有很大不同。阆中的松花皮蛋采用传统的天然原料配方,故不含铅,也无其它有害物质,且含有多种氨基酸和酸纳,呈弱碱近中性。皮蛋透明,松花清晰,富有弹性;蛋黄油润,略带糖心,桔红透亮;味道纯正鲜美,不含碱味。可用刀任意切割,做成各种式样的工艺菜,晶莹美观,宛若五彩缤纷的盆景。
阆中市双龙镇许家桥村,是四川最大的皮蛋生产基地,年产皮蛋达1亿枚以上,在四川的市场占有率超过50%。阆中古城区内有一家许家桥无铅松花皮蛋专卖店——“许家桥皮蛋坊”,位于南街,有散装的和精装的皮蛋出售。

皮蛋 很久没吃了. 不过你们是否落掉了最重要的 condiment (including what's depicted in the pictures), namely "香油", 南方叫 "麻油", 即 sesame oil ... without it it's inedible IMO.
