在周年記念日那天,吃過什麼菜也得從實招認了。廣東梅菜是甜的,鹹酸菜是酸的,這與雪裡紅,雪菜有別。潮州人吃沙河粉及米粉喜歡下梅菜,鹹酸菜用來炒牛肉最好。在香港的雪裡紅不是新鮮的,是浸在缸裡,煲湯用。罐頭裝有雪菜肉絲,當然還有梅菜扣肉,罐頭及醃製食品都是多食無益,還是吃新鮮的好。

肥而不腻的梅菜扣肉 Oct 22, 2006



[菜名]:梅菜扣肉

[菜系]:闽菜

[原料|调料]

猪五花肉1000克,梅菜150克,豆豉15克,红腐乳10克,姜5片,蒜头5粒,白糖l.5汤匙,川椒酒1茶匙,深色酱油l汤匙,浅色酱油1茶匙,生粉适量。

[制作流程]

1、将花肉刮洗干净,用清水煮至刚熟,取出,以深色酱油1/3汤匙涂匀肉皮。烧热炒锅,下油,烧至七成熟,将肉放入油中,加盖炸至无响声,捞起,晾凉后改切成长8厘米、宽4厘米、厚0.5厘米的块状,排放在扣碗内,成风车形。

2、将豆豉、蒜头、红腐乳压烂成茸,放入碗内,加入川椒酒、盐、白糖1汤匙、深色酱油、姜片,调成味汁,倒入肉内,然后整碗放锅中蒸约40分钟取出。

3、将梅菜心洗净,切成长3厘米、宽1厘米的片,用白糖、浅色酱油拌匀,放在肉上,再蒸5分钟取出,滤出原汁,然后将肉复扣在深碟中,将原汁烧滚,加生粉水勾稀芡淋入深碟中即可。

这样香喷喷的梅菜扣肉就可以上桌享受了
