上星期去餐馆打牙祭,吃了好些东南亚风格的菜肴和点心。有一款叫茄香蜗牛,据说是融合了法国大餐的做法,非常好吃。只可惜,正当我大夸这个菜时,筷子夹出一根长长的头发丝,又细又软又卷,想必那头发主人一定是一头漂亮的长发。好不扫兴。店家说要不要重新上一份,算了!结帐时没算这个。我总觉得应该再给我打折,弥补“心理创伤”才是!

那家餐廳可以不去了,見到是頭髮,見不到的還有些什麼東東,就不得而知了。皮蛋含鉛的問題,不要嚇怕霈霖,我不是暗示過少吃多滋味嗎!有些說是不含鉛的,如果不食,就只有看看圖片。霈霖問軟\硬黃的問題,我問過外母大人,即皇\黃家大廚,她說不知道,我說踫運氣,如是太軟,先放在冰箱便可。

四川菜﹕青椒皮蛋 Mar 29, 2007



青椒皮蛋 配料:

皮蛋4只,青椒150克,酱油2茶匙,香油适量。

青椒皮蛋 制作方法:
①将皮蛋剥去灰壳,在冷开水中洗净。将青椒(选用老嫩适宜的皮蛋及小青椒)用一根竹签穿上,在火上烧熟,用干净的沙布抹净,去蒂去籽,用刀剁细备用。

②将每个皮蛋对剖两瓣,每瓣改成4小瓣,摆入碟中,放上剁细的青椒,将味精、香油、酱油调匀,淋在皮蛋上即可。

齋腸來身無乜味,所以食嗰陣會加上唔通醬來調下味。成日見到嘅有甜醬、混醬、辣醫、豉油,有時重會加芝麻。蝦米腸通係再煎來食。而其他腸因為已經有料鮮味,就只係加豉油來食。

粥麪舖有一味叫炸両,係將腸粉包住條油炸鬼。

1990年代開始,香港酒樓加一味炒腸粉嘅菜式,通常係加入XO醬,當一般炒粉麪來賣。

製法
幾十年前開始,豬腸粉係將啲米漿淋上去放咗白布嘅平木架上面,再放入鑊蒸到變膜。拎塊出來卷就變成豬腸粉。

齋腸、蝦米腸因為餡少,所以卷出來就好似一條條圖柱。而其他嘅餡多,就會卷到扁平。
