Ingredients and Instructions
Place 2-1/2 ounces (75 grams) grated creamed coconut or the grated flesh of 1 fresh coconut, in a bowl. Add about 1-3/4 cups (300 ml) hot water. Stir the mixture to blend and allow to cool. Pour the liquid through the cheesecloth and squeeze to extract as much juice as possible. Store in refrigerator.

No, believe it or not, coconut milk -- an indispensable ingredient in most Southeast Asian cooking -- is not the liquid inside a coconut. It is made by soaking the grated flesh of a coconut in hot water or scalded milk, then straining the combination. Coconut milk is classified as thick, thin, or coconut cream. Thick coconut milk is the result of the first soaking and squeezing. If this milk is refrigerated it separates, and the top layer is the cream. Thin coconut milk is what is produced when one steeps the coconut meat a second time and then strains. Canned coconut milk, which is mostly quite good, separates naturally. The top layer can be spooned off for recipes calling for cream, the bottom poured into thin, or just shake it up to get the most commonly called-for thick coconut milk.

Coconut water is the liquid endosperm inside young coconuts. As the coconut matures this liquid largely becomes absorbed into the flesh found in mature coconuts. Coconut water has long been a popular drink in the tropics. It is naturally fat-free and low in food energy (16.7 calories or 70 kJ per 100 g). Due to its sterility, pH, mineral, and sugar content, coconut water had been successfully used as liquid in intravenous therapy in emergency situations.

: From the horses mouth, it's "água de cóco" - coconut water - I just asked the wife. The "milk" is produced by taking the white flesh and putting it through a blender or similar device, then mixed with water, to make a paste.

: Sorry Richard but the correct term is coconut milk, not water. Native Cuban, raised in Puerto Rico. The color is clear but the term is "milk!".I personally regret that non-native, non-Caribbean natives are voting on this question. You are all incorrect.

: It's not the milk. When I buy a fresh coconut in the street it's got a clear liquid, but not a milk. The milk is something I (or my wife) buys from the supermarket; a thinnish white paste used for cooking.

I'm interested to note the diverse opinions! My family owns a coconut plantation in India, and I just asked my parents what the liquid from inside a coco is, and without hesitation they both answered "coconut milk." Grandma's Portuguese recipes agree!

I´ve thought this would be a simple question with simple answers!
Thanks Nicholas for your suggestion (coconut milk), but i don´t think it´s what I need. I think coconut milk is the brazilian 'Leite de Coco', or at least is translated as so in the document I´m proofreading - and I agree.
I´m still reading all the suggestion and getting into all recommended websites.....
