a delicate and unique pearl (jewel, gem, masterpiece)

I personally like pearl, but any of the above... and for special, I prefer unique, because that is really what they mean here.

This monastery is, without doubt, a rare and exquisite gem

You could also use a "rare and outstanding gem of a monastery", there are many ghits for this kind of language used in connection with churches, landscapes etc

agree Carol Gullidge : I'd steer clear of 'delicate', and prefer 'gem' to 'pearl' , which is used more in the context of, eg, a town or resort - "xxxx, the pearl of the Mediterranean"

singular jewel of a site

"singular" is a good word to use in English to tout something. The description in Spanish is really very beautifully written and all of the suggestions are good.
