To Simon: Literal: Whenever you catch a fish from water it is fresh.
Meaning: You're never too old to change your ways. Learning is always possible.
It is never too late to apologize for something you have done or try to repair something you have done wrong

Literally, it means "whenever you catch the fish, it is fresh.”
