far insaporire la pietanza con l'aglio ma poi eliminarlo dalla pietanza stessa

quindi aromatizzare la pietanza ma poi eliminare perchè non deve rimanere nella pietanza prima di servirla

spremere e filtrare

"To strain" significa separare la parte solida da quella liquida (nei cibi), credo voglia dire che devi spremere l'aglio e, dopo averlo filtrato, eliminare la parte "solida" rimasta.
