Tuorlo e uova interi vengono aggiunti alla riduzione- (base Explanation: chiamala come vuoi- riduzione o base- Dicevo: vengono aggiunti, e poi nel bagnomaria montati " a schiuma" dato che col tuorlo non puoi montare niente " a neve". Ma per la base guarda la "béarnaise"- che l'"Hollandaise non si fa con una reduzione. Io non so allegare i links.
