all bets are off...figuratively, means the situation has changed and no one knows with any certainty what will happen next.
Let's say you are at a horserace and have placed a bet on a horse. Before the race begins the favorite horse breaks a leg. The loudspeakers announce, " Ladies and gentelemen all bets are off! Return you tickets!"
The conditions of the race have changed and the bookmakers can no longer calculate the chances of any horse winning, so they have called off the bets.

Em segundo lugar, um pouco mais de contexto, os meus heróis da história estão em apuros, os vilões descobriram a sua verdadeira identidade e o narrador diz: All bets are off now. He was down to a few desperate chances. Portanto, eu acho que exprime a ideia de que, como o delveneto disse, **o futuro está em aberto**, já não há nada certo, ou como o quandt disse na referência "The situation has changed to make the outcome uncertain.".
Talvez algo como: a partir de agora o futuro é incerto.
eu acho que é no sentido de que se já não há hipóteses/variáveis, nem expectativas para que a coisa mude...então cancela-se, fica sem efeito o acordo (por exemplo o casamento, no exemplo referido por uma colega). Just trying to think big!
