sawbones

Now I say I know this word. What confuses me is when it is used in this sentence.

-- a sufficient number of complete procedures has been successfully simulated on sawbones and/or cadavers, the system can be used in selected operations.

My understanding (verified by several dictionaries) on the word is "physician, surgeons". But it does not make sense in this context. How do you interprete (no, "translate") this?
