خوش رکاب is the title of an Iran TV serial.

I appreciate that the meaning may not be fully clear even to native speakers, but I am sure you will have a far better idea than I do!

Is رکاب a pedal on a bike or a running-board on an old-fashioned car in this case?

"rekab" can mean "stirrup/treadle/step/running board" and here it is an example of synecdoche, that is the part refers to the whole. (Using "ride" is also a synecdoche.)

There is a famous motorcycle movie with Peter Fonda and Dennis Hopper called "Easy Rider"...this would be a good option except that it has already been used.

Here "رکاب" doesn't mean pedal. Like you mentioned it means an old-fashined car or truck. I think hot ride is a good equivalent.

خوش رکاب may have many connotations, including:

comfortable; a car which would not let you down in roads; easy to drive and etc.

I am not sure but as a matter of conjecture, maybe رکاب here refers to رکاب of horses.

I guess "رکاب" means 'ride' here.
خوش‌رکاب is an adjective used to refer to submissive horses, but it can also be figuratively used for cars or even humans.
