Qualcuno mi può suggerire un'espressione equivalente? A me verrebbe da dire "finché non compaiono le prime bollicine". La frase intera è la seguente, tratta da una ricetta:
A simply tasty way to serve hot cheese. Mrs Beeton recommends the use of little heated dishes to help keep the cheese warm — in a modern kitchen we have the advantage of a grill under which we can heat the mixture to bubbling perfection.

E una espressione registrata da Accademia della Crusca è uno dei principali riferimenti per lo studio della lingua italiana. Inoltre Firenze è considerata "culla delle lettere" e più volte Capitale della cultura.

in ambito alberghiero sarà anche usata, questa espressione, ma è appunto linguaggio più "tecnico" rispetto a quello delle ricette per i comuni mortali.

Ribadisco e chiudo: che l'espressione "staccare il bollore" esista e sia corretta è fuor di dubbio, che sia comunemente usata, IMHO, altrettanto.

In ogni caso ho precisato che non è sbagliato, solo che è poco comune (se è per quello figura anche su Treccani e dizionario di Repubblica, ma il fatto che compaia in un dizionario non vuol dire che la gente lo usi normalmente). E comunque non lo userei per il formaggio fuso.
2) nemmeno io parlerei di bollore/bollire/ebollizione in riferimento al formaggio fuso o che fonde: sotto il grill comincia, appunto, a fare le bollicine, ovvero a sfrigolare - verbo forse più legato all'udito che alla vista (?), ma il concetto mi pare quello…
