Jamon crudo is like the prosciutto or serrano type, for example ... cured. Cooked ham is the "ham and cheese" type ham, the lunchmeat ham.

agree Bill Greendyk : In our part of the US we call the second one "boiled ham," but that just refers to the manner in which it was "cooked."
