This is talking about the ancient "frantoio ipogeo" in the village of Vernole http://www.comune.vernole.le.it/video/vfrantoio.php

and if you lok at the URL, you'll see it's quite a wonderful place for a visit, so "underground olive press" doesn't really do it justice, and I need to get this across so that visitors to a convention will not think it is just a modern olive press of no interest and decide t miss out on the tour

If it isn't unique it's certainly very unusual and it looks like a really nice place to visit. If you or they don't want to add that many words, then "historic underground olive press" would be OK.

This is lovely, Jane. As all of the participants are from Mediterranean countries, they won't need the old world charm to get them there, but definitely "of exceptional historic interest" works wonderfully!
