Good morning all! I'm currently translating a CV and I got "cuoca di batteria nel ristorante..." I'm wondering if there is a French equivalent for "cuoca di batteria"!

Già bisogna capire com’è strutturata una cucina della grande ristorazione. Partendo dall’alto troviamo il primo Capo Cuoco cioè il Maestro (Maitre), colui che dirige, controlla e ripartisce tutto il lavoro, poi i Capi Cuoco di secondo livello, che dirigono le batterie, sotto lo sguardo del Maestro.

Poi troviamo le batterie, che di solito sono composte da un Cuoco, un aiuto Cuoco e un Comis de cuisine, la batteria si occupa di un determinato tipo di piatti, abbiamo ad esempio gli entremetier, i saucier, i decoratori, gli intagliatori di ghiaccio, i patissier, i viandier, i grilleur, ect, ect.
