Either one of these terms refer to ''sombrero eólico'' but I think ''wind-driven exhaust roof fan'' is the most specific reference.

In the US at least, "wind turbine" is by far the most common term. I wouldn't use fan, because - to me, anyway - that implies something with a motor. The benefit of a wind turbine is that is turns by the action of the wind, and doesn't use any power.
Example sentence:
Wind turbines use the natural force of the wind to create air flow and provide ventilation. The free spinning turbine is self-lubricating, drawing hot humid air out from the attic.
