SADLES Explanation: My grandpa was from Orvieto and I remember he used to say "MISCOLA" for "MESTOLO" that is SADLE, but I don't know anything more. It would be the dialect for MESTOLI |

terracotta mixing bowls Explanation: I think you're right - I found a site on medieval culture (in English),which includes 15 century Italian recipes and another medieval cookery site (again in English) giving recipes in "old" Italian, and in both the imperative for "mix" is written "miscola" (see below).I also found a umbrian cookery page with a pizza recipe (which seems to be written in dialect), which instructs the reader to combine certain ingredients with "la miscola". MEDIEVAL RECIPES: ** Salsize bone ........he miscola tute quests cose inseam he lassa stare per uno di; dapoi tolle budella ben nettata he impele de questa material, poi pone le salzize a sugare al fumo. mix everything together and let it stand for a day; then get very well cleaned intestines and stuff them with this mixture, and set the sausages to dry in smoke. From another medieval cookery page- recipe for Apple Muse (sic) .... Piglia amandole he pistale tanto quanto se po, he fane latte; poi piglia dece ho .xii. pome cotte he, como serano cotte, pistale molto bene he passale par la seta he miscola cum lo latte de le amandole he cum uno poco de aqua rosata he zucaro; he fa cocere questo latte cum le pome tanto che ogni cosa sia spissa; poi leva dalo focho he fane menestre.
