These autistic children are taken to a swimming pool with their classmates for lessons in * acquaticitá*
I'm thinking of "water therapy" but I'm not entirely happy with it. Any ideas?

Adapted aquatics is another technique used with autistic children as well as other patients (www.adaptedaquatics.org/references.htm).
Depending on your context, you may want to consider this one, too.
Definition: Adapted aquatics are techniques that emphasize swimming skills modified or adapted to accommodate individual abilities. Usually used with people with disabilities, adapted aquatics focuses on skills including pool entry and exit and swimming skill development, and should also encompass community referral.

I think you're on the right track but I believe acquaticità is related to swimming skills and baby swimming classes so perhaps swimming therapy might do?

hydrotherapy
if you Google for "hydrotherapy", "water therapy", "aquatic therapy", or other candidate phrases, each also with the word "autism", you get most hits for "hydrotherapy", hence that appears the most commonly used (although not the only) term. HTH.
