A study to investigate the effect of different protective cultures on the microbiological and sensory product quality of fresh, MAP packed minced poultry meat stored at +2°C. Fresh minced turkey meat was prepared which was inoculated during preparation with the two protective cultures being compared, then packed and stored in a modified atmosphere, and then: “an den Lagerungstagen 0, 3, 5, 7 und 10 mikrobiologisch, physikalisch und sensorisch untersucht wurde“.
I’m not sure whether “physically examined” is appropriate here, or of the best way of translating “sensorisch“.

examined physically and tasted by testers
physikalisch here I think means physically, not science (physics), but in the sense of quality (body, as in body and mind), since they checked 0, 3, 5, 7 and 10 days after packed and stored in a modified atmosphere, and sensorisch is like you said, sampled the product and assessed its characteristics - flavor, taste, etc.

"sensorisch" is not "tasted" bc it can also entail smelling and visual examination (as in a "sensorische" examination of a wine).
