Does this mean they are topped with a sauce/gravy?

Cooked in the sauce/gravy?

Spiced/spicy?

Probably obvious, but just to stress that this can´t be left as "salsa" since that would be the spicy tomato-rich dip for nachos etc, which I think we´ll all agree this is not!

Solmillo is sirloin: I would say Beef Gravy (Beef sauce doesn't sound right).

I too am a little confused - does it just say Entrecôte salsa and nothing else? Could it be Beef in Entrecôte sauce (based on last entry)?

Cebón is applied to fattened animals, pig and veal included, but entrecot only apply to veal, ox, beef, so the correct translation for «entrecot de cebón» is as simple «beef entrecote». Here, in Spain restaurants, we apply cebón, and specially entrecot de cebón, only to beef. Please remember that the gastronomy have its own language. I am a gastronomic writer, so you can ask all you want about this.

I don't think "gravy" applies to these steaks which are probably grilled. "Gravy" is made from the juices of roasted or pan-fried meats, thickened usually with flour or cornstarch.

Most steaks come with sauces such as green peppercorn, wine, Bernaise, garlic, etc., which are not "gravies" per se.

If this is a menu from a Spanish restaurant serving Spanish food, I'd go with "sauce" -- "gravy" as defined above ("Bisto" style) doesn't form part of traditional Spanish cuisine.

One final note: I assume this is for British English speakers; if it were for American English speakers, it would be:

rib-eye/sirloin steak in sauce
