Mi problema aquí es que tengo abrillantar y glasear ambas dentro del mismo glosario y requiero, en la medida de lo posible, una palabra única que abarque el significado de cada una de ellas. Para glasear, puse glaze.

If you really need two words, maybe gloss would do as the other one. However, glaze is the standard word for this type of finish applied to foods.

The only thing that comes to mind is "shine". An example would be an egg or milk wash on crusts before baking.
