„Restaurantbesucher“/„-kunden“/„-gäste“ o.ä. passt hier m.E. überhaupt nicht, weil es sich anhört, als hätte man die Umfrage direkt in/vor Restaurants durchgeführt, um die Gäste zu befragen. Es wurden aber eben nicht die Besucher in einem Restaurant befragt, sondern die breite Öffentlichkeit im Rahmen einer Online-Umfrage.

  -> Das fände ich hier etwas zu sperrig und unnötig spezifisch. Schließlich gibt es kaum einen Verbraucher, der nicht auch Restaurantbesucher ist.
