they go on to transcribe the contract.

Does this mean "we received your correspondence which we reproduce indicating total acceptance"
or
"which we reproduce in its entirety indicating acceptance"
(or something else?

yes, you're practically there- it means they have transcribed it so as to sign it at the end and thereby indicate their approval and acceptance of the contents.

indeed. It is as a token = sign of acceptance and not a token acceptance - two different things.

If you don't put "signed" in the translation it would sound very strange in English.
