Based on the product I don't think this is to do with the dreaded "soggy pastry bottom", these are molds for chocolates, jellies etc. I wonder if it has something to do with the chocolates etc. "sweating" inside the mold. A silicone is more temperature resistant than, eg, a metal mold, so it would be less prone to condensation if it is heated or cooled... Just a guess. |
