Since it's a list relating to financial fees, it could be "breakdown by loan", referring to some list/data on fees paid in relation to administration of each of various loans.

is translated as: "D’où l’idée que l’on devrait revenir à l’âge d’or où les banques commerciales accordaient des prêts aux ménages et aux entreprises et les gardaient inscrits à leurs bilans, au lieu de les fractionner et de les découper avant de s’en défaire."
So, the other way around: "fractionner" (see Asker's additional context details) becomes "to slice".
