Let us consider two soups:
kwaśnica and chłodnik
kwaśna zupa -> kwaśn + ica = kwaśnica
chłodna zupa -> chłodn + ik = chłodnik
-ica and -ik are determining the gender of a noun

Originally suffix -ica marked a diminutative.

Perhaps it is a limit of my imagination, but I cannot conceive of suffixes that are meaningless. I understand there is no hard-and-fast rule, but there must be some explanation... no?

@Asker No semantics at all, just formation of the new word jajecznica from word jajko/jajka. There is no rule saying -nica denotes processed food, some -nica denote places, some - tools, but in this very case it seems to be just a suffix (perhaps potrawa jajeczna -> jajecznica)

What about 'pszenica'? ;) In any case, just think about English a moment: the ending -er usually denotes the person who performs an action, e.g. teacher, killer, dancer, etc., but then we have the colloquial word 'keeper', as in 'He's a keeper', meaning one who should be kept or held on to. Languages are never perfectly consistent (Does this really need to be said?).

Word formation is not as simple and logical. You may check the etymology dictionary to find out more how this particular word was formed. It is not something people would know in everyday life.

Przepraszam, już późno w Kanadzie :). Wydaje mi się, że jest to zbitka idiomatyczna, bo nie można porównywać np. jajecznicy z kuźnicą, czy tarcicą (od tartaku). Po prostu należy się poduczyć idiomów i nie szukać w każdej zbitce reguł.

Nie wiem, po co ten wywód, ale zamawiając w restauracji czy barze "scramble" (w Ameryce Północnej) ryzykuje się zaciekawione spojrzenia personelu dające do zrozumienia, że nie bardzo wiedzą o co chodzi.

@Asker -nica is an ending of noun of feminine gender
( for instance -nik is an ending of noun of masculine gender )
-nica may denote place or tool, but generally it indicates the feminine gender of a noun.
Thus the possible explanation is:
potrawa(fem.) z jajek -> jajek + -nica = jajecznica
k is substituted with cz
PS. Note that the adjective made from noun is jajeczny.
