Fui no dicionário para entender o que é pedra-de-mão.
A definição do Houaiss :
pedra-de-mão s.f. CONSTR Pedra bruta, partida com marrão, em pedaços que podem ser manuseados; pedra amarroada GRAM Pl.: pedras-de-mão
Por tanto pedra quebrada co grande martelo chamado de marrão e de pequeno tamanho.
Em português e em galego existem também rebo e cascalho, pero sempre têm no significado uma referência ao entulho, a material de demolição.
Em pedra-de-mão há um significado de pedra quebrada, britada, partida ad hoc para a venda como material de construção.

Lembrando que optei, na pergunta sobre pedras argamassadas (Canais em enrocamento (pedras argamassadas, semiarrumadas ou lançadas)), por colocar mortared stones, conforme sugerido neste site.
