Hi,
I'm not sure how to translate this term. It is contrasted with the term "vinaigre aromatisé".
For example: "Les vinaigres élaborés désignent ces vinaigres réalisés à partir de fruits, de légumes et de céréales autres que les plus courants".
I can distinguish between the two types of raspberry vinegar for example by using the terms "raspberry vinegar" and "raspberry-flavoured vinegar" but I'm not sure how to translate the term when it just refers to vinegar in general.
All suggestions most welcome.

Nonsense. Thee are twocategories, specialty vinegars and flavored vinegars which happen to correspond with the two types (elaboré and aromatisé) in the text. vinaigres elaborés include all sorts of vinegars including wine, etc.

manufactured vinegar
élaboré un vin = manufacture wine (GDT); so vinaigre élaboré should mean manufactured vinegar. Your sentence should mean that vinegar is manufactured from the fruits, vegetables and cereals. The two links below show the usage. (The English translation is poor -- but my belief is that the translation of vinaigre élaboré is correct).
Discussion
I hope you are not looking for classification of vinegars. There are just several types of vinegars. Flavoured vinegar, for instance, could be one type. Fruit vinegar could be another. Specialty vinegars could be another broad type. From all the suggestions you have received so far I am sure you should be able translate it well. If you need clarifications, provide more context and ask. Not sure about your doubt about raspberry. Good luck.
