Special context:
I am talking about the topic in school called "teknik" in Sweden. Growing up in Canada, we called it "Shop", but that might be a colonial quaintness. Just calling it "Technology" might not give the right impression. I have heard "Industrial Arts".

I am looking for something that would be understood correctly across the English-speaking world.
