I'm struggling to work out what exactly an expanse of meadows would be offering this palatial property... A view (over the meadows?). Or does it simply broaden the horizons, providing views into the distance? I can find very little on Google, and so far, nothing conclusive, so would be very grateful for any suggestions. Many thanks!

Carol, although totally subjecitve, for what its worth, looking at the paragraph I'm inclined to think that they are talking about the view you have from the house towards the fields, simply because that is the first impression I had the first time I read it, being a native Spanish speaker.
Couldn't you ask the client?

location the photo just shows a rather fine rural house with a swimming pool in the front, and what looks like a field and part of a slope behind the house. I hesitated to provide too much of a description, simply because there's an existing translation, which looks like a total mismatch with the property (describing 2 non-existent towers, etc), so I'm not sure how helpful this is.

Location Is this 'house' in a valley by any chance? Maybe the meadows/grasslands are overlooking the house?

dan If they are referring to the 'gran extensión' shouldn´t it then be 'da' instead of 'dan'? Just an observation.

The consensus seems to be that the house has comanding views OVER the surrounding meadows, rather than the other way round"

You will need to restructure the sentence though.

'prado' can also mean 'grassland' or 'lawns' (depends on your context)

Si quieres conservar la estructura del ingles, para poder dar detalles sobre la mansion, podrias tambien comenzar la oracion con:

Surrounded by scenic meadows, this peaceful palace house was carefully restored ...

Lo que hace del sujeto "casa palaciega" y el verbo seria "ofrece la oportunidad de conocer las costumbres..."
