'pesto alla genovese'
Sorry for writing in English. I'm Italian and I know well this speciality of Genua (à la genoise, made like in Genua). The name is written uncorrectly in French. Pesto is a special sauce made of basilikum and pine seeds which we put on the pasta.
After my opinion, you should leave the original name in Italian and clear in ( ) what it is..
Of course I'm not interested in points in this language combination, I just wanted to be nice to you. You never heard of 'pesto' down there, didn't you?

Italians say only 'pesto' because most of them know it's a speciality of that town.
Now - lot of variations have come on the market in the meanwhile - when they say 'pesto alla genovese' it's to point out they they prepare it after the original recipe (a lot a pine seeds, terribly expensive now - hand made the whole of it, a lot of hours necessary to prepare it and so on...).
If you say in Arabic something like 'hand-made pesto' or 'original pesto' should be ok, I suppose.

Thanks for your generosity. being a big fan of Italian food I understand what pesto is, it's the part "a la genoise" I am interested in. I think I will take your advice I keep it as is. |
