I don't think it's the cow-spotted thing here, because they are talking about the entire style of the locale. I would say "cowpoke". It's a more casual synonym for cowboy.

a prescindere dalla mia prima reazione quando ho letto la domanda ("ma chi scrive 'sta roba?"), se stile "muccato" non sta a significare cow style (io lo tradurrei così), non mi sembra che ti restino molte altre opzioni a parte country style e saloon style, che però hai già nella frase che precede e non puoi ripetere.
Io, non potendo usare il riferimento alla mucca, elegantemente glisserei...
