What else?! Seriously, I do think we should include the original name - "all" we need to find out now is what the ingredients are. Basque no doubt.

Not getting very far. I've been playing around with spellings, and find txantxangorri, a robin, (petirrojo), and a restaurant of the same name in Hondarribia. Maybe the sauce is red and brown... (no way am I going to suggest it's made from the "gardener's friend"!)

Bingo! http://www.cocinavino.com/tureceta/tureceta.php?id_tureceta=... - it's a sweet sauce in this case, almond and cream. But no doubt can be adapted for savoury.
So: *chonchongorri sauce (almond and cream sauce)*

Now I'm confused: no almonds in this recipe: http://www.facilisimo.com/foro/platodeldia/?pagina=foro_ver-...
Any comments from Basque speakers/residents? I'm sure it tastes wonderful!
