: Avoid "choice". USDA has already appropriated Prime/Choice/Select (+ Cutter/Canner/…) as grades of quality (marbling, etc.). The *carcass* is graded, not the cut. Find a different adjective.

There are the better cuts, and then there are the less popular, not so good cuts. Nobility is out of fashion these days, on the farm as elsewhere.
