Hi, can anyone help to answer what does this mean please? 'You have gone all Lancashire on us.' Someone told an embarrassing joke to others, and then one of the audience said 'You have gone all Lancashire on us'. Anyone can help to explain in English?

It's hard to know without the context what they mean exactly by saying 'Lancashire'. Do you have more context? I would guess they are talking about the person speaking in a Lancashire accent, or behaving in a stereotypically-Lancashire way...
