remove the heads with two slices, one from each side of the fish Explanation: I´ve posted your query in a food forum, and nobody could settle our doubts. However, looking at videos of how to remove fish heads, it seems that the usual method is to slice down from one side of the fish, at an angle, with the knife aiming towards the head, and then the same on the other side: two slices at an angle that join in the middle, so that the head falls off. So, the "tres puntas" could be indicating that triangle shape, literally the three points of a triangle. What do you think?
