However, for some reason, I seem to have dealt with "largeur de la bordure" rather than the term asked for ("bordures"), which I completely overlooked!

How far the wine rises up the glass says a lot about the sugar/alcohol content. This is the 'largeur de la bordure' mentioned in Asker's source text.
It refers to the 'meniscus', but I'm not sure if that's actually the term used in œnology; maybe it would help you to research it further?
