I know it generally means conversion, but I can't quite see how that works here. There are later references to an *Umwandlungsvereinbarung* (eine Kuendigung der Umwandlungsvereinbarung"

Let me be quick to disclaim expertise. In this country many pension plans have been transformed into investment accounts. Some employers open a defined choice of investments (usually 'mutual funds') and there are special tax provisions. But German plans are most likely quite different and I can't speak to these.

roll-over might actually be better - a certain amount is "converted" for a later pension/capital payout. Thanks!

I've been put through something of the kind, but my papers speak of pay-out, deferral, roll-over, not expressly conversion. Which however looks plausible to me.

It is a specific German plan for employers to provide a pension saving plan to employees. From what I have found, it seems the best translation is a "conversion agreement"

It depends on how literally you want to stick to the German terms.

Here for "in dem die erste Umwandlung erfolgt" ... you could write "in which earnings are first converted to pension contributions"

a more simple variation would be "in which the first (employee) contributions to the pension scheme are paid" or something like this.

I don't know what you call these things in the US but in the UK we would call this an occupational pension scheme.

German law allows you to "convert" a certain proportion of your gross earnings into pension contributions (Entgeltumwandlung).

Have a look at Section 1a of the Gesetz zur Verbesserung der betrieblichen Altersversorgung
