As this is for a 'stock valuation' - rather than indicate they have late paying debtors, it might be best to say they have 'monies due' that is 'outstanding' - as it could encompass various payments expected.

[Plus 'outstanding' sounds like both an adjective and a gerhund - and overdue only sounds like an adjective. - personal preference]

So "Scopertura media crediti in giorni" might be something like 'Outstanding credit - in days.' (I add the dash to show it's the units of measure, not that the days are a credit.)
