Sorry I forgot to mention this is North American English... so it's squash. It's "moutardine" I am unsure of. Thanks.

Courgette salad and almonds with a mustard sauce

I'm pretty sure that courges is short for courgette (or zucchini) and the only moutardine that I know of is a sauce.

Yep, its definitely a mustard sauce. Heres the recipe. You could leave it as moutardine of course and add a little culture to the recipe :< )

Courge or 'Potiron' (depending on the Regions, courge is mainly used in the South) in French is definately 'squash' (US) or 'Pumpkin' (GB)

courgettes/zucchini and almond salad with mustard dressing

there are different types of vegetables in the squash family, courgettes or zucchini are the most specific translation for courges. based on the recipes found on french sights for moutardine this is a mustard based dressing

Watch out!

'courges' is of course marrow [BE] / squash [AE], even though younger specimens are used, and don't look much different from courgette / zucchini

HOWEVER, don't forget that 'amande' can also be a type of shellfish, not unlike a clam (palourde, etc.)

It seems to me that a 'fish/meat' ingredient is possibly quite likely in conjunction with something as bland as a squash, and so should not be overlooked!

Julie is quite right, almonds as nuts are of course commonly used on such salads, and the logic of her last comment is correct: they would indeed almost certainly have listed 'amande' first if it had been the expensive shellfish ingredient!

neutral Julie Barber : it's common to have nuts, seeds etc sprinkled over pumpkin or squash in a salad. Courge + amande comes up a whole range of almond dishes on google. If it was seafood I think it would have been 'amande et courge'! with the SF taking prime position!
