It is unclear to me what kind of sails are being let out or unfurled, and what "Eté" means in this sentence. It is certainly not "summer". This travelogue, about a sailing voyage, is being dictated and the "scribe" does not always know the word and sometimes writes a homophone.

Context: Their ship (with all sails out to go fast as possible) has approached another, which had been flying an English flag and had all the sails clued up. As they get closer, they see the English flag going down and a pirate flag going up. They decide to avoid conflict and return to their original course, and subsequently see the pirate ship "sortir à son tour jusquaux voils d'Eté et fit route sur nous."
