Normally, you'd say what type of meat it is, followed by poivré(e) [make sure it agrees with the gender of the meat!]
It would sound very odd to just say 'viande poivrée', but I suppose you might....

Tout dépend s'il s'agit de viande crue (steaks par exemple qui sont couramment vendus actuellement) ou de steaks servis dans un restaurant. Dans ce cas je pense à nappée d'une sauce poivrade.
