Situé sur un mamelon arrondi, à une altitude de 268 mètres, le bourg … constituait un « castrum », position de défense délimitée à l’ouest par des « Fossés » aujourd’hui comblés.

Sometimes _castrum_ can be translated as "castle" --if it is a large and imposing enough structure; but in your case i would suggest leaving it in place, but perhaps in quotes with a redundant modifier for clarity : "...a defensive 'castrum'..."

Esp. when it is a question of a technical term. In brief, in the M.A. (which is what your site is concerned with) the _castrum_ was the fortified part of the settlement --as opposed to the _burg_, which, typically, grew up around the castrum.
