It seems therefore that what they are saying is that the meal (food) then only needs to maintain the rhythm, keep up the elegance...

After that, the actual food only has to keep the flow of elegance going.

Not sure what I would say for "elegances" given that I suspect it has been mentioned before and a lot will depend on how it is translated there.

Maybe "sustain this feeling of elegance" or "sustain the same high class as the rest"

Just some ideas - it has nothing to do with one thing beating or being better than another
