Доверитель - это правильно, в случае перевода на наш язык, т.к. это правильный юр. термин для нашего законодательства. Однако правильно и Грантор в зависимости от контекста, т.к. в зарубежном праве различают два типа доверителей: сеттлор и грантор. Эквивалентов нет в русском языке, поэтому и переводят транслитерацией. В зависимости от аудитории, для которой переводится, иногда используют этот прямой термин (Грантор или Сеттлор).

... мы не допускаем, чтобы доверитель (сеттлор или грантор), сохраняет абсолютный прямой контроль трастовых активов, становясь ...
