Diffirent sources suggest different meanings:

So it might mean מבוטח ראשי, but it might have the meaning of שולח לפי דיני שליחות, or that of someone who a service is being provided to.

While I agree with המבוטח הראשי, it could also mean the above

Therefore סכום מבוטח seems to be the mpst reasonable

In this context it doesn't seem to carry that meaning, b/c the lsit later states: " (iii) the period, scope and amount of coverage;"
