Source text - English The Story of a Large, Seasonal Restaurant on a Tiny Volcanic Island off the South Coast of Iceland

“That’s the best part,” says a fisherman on the docks of Heimaey in the Vestmannaeyjar archipelago off the southern coast of Iceland, when Gísli Matthías Auðunsson picks up a cooler full of cod heads to cook at his seasonal restaurant Slippurinn, a few steps away in an old machine workshop in the shipyard.
“But do you use them?” Auðunsson asks.
“Not really,” says the fisherman, who doesn’t even charge him for the cod heads.
Over the last century, Iceland went from having the lowest GDP per capita in Western Europe to one of the world’s highest. They went from poor to rich within a generation or two, completely disrupting the food system. Icelandic cuisine transitioned from being the food of survival in an often inhospitable landscape to food of luxury and convenience. Why bother using every part of an animal or preserve it in whey when you can always have the filets for every meal?

Source text - English AN OPPORTUNITY TO RESHAPE OUR PRIORITIES
The world has changed. While it’s still too early to say the exact economic impact of Covid-19 will have in Latin America, it is unlikely anything will return to the way it once was anytime soon.
Peru acted aggressive early. A shelter in place policy was enacted so suddenly that many were caught off guard. We had to personally help a notable Texas BBQ writer and his family find a flight out of the country. Lima’s Plaza de Toros, the oldest bullring in the Americas, has been turned into a shelter to protect the homeless from the virus. Hopefully, some of the damage from the virus will be mitigated because of these efforts.
The culinary community will undoubtedly take a hit. Aside of the immediate impact of being closed for several months, restaurants in places like Lima and Cusco, not to mention the small producers that make them possible, that rely considerably on tourism revenue will need to find ways to survive. Collectively, Peru’s food community will need to find a way to work together, like they have over the past three decades, but there are no easy answers right now. I reached out to my friend and collaborator Virgilio Martínez what he thought.

Il Perù è subito corso ai ripari. La chiusura delle frontiere è stata disposta così tempestivamente da cogliere molte persone alla sprovvista. Siamo dovuti intervenire di persona per aiutare un famoso giornalista del Texas Monthly e la sua famiglia a trovare un volo per lasciare il paese. La Plaza de toros di Lima, l’arena più antica d’America, è stata trasformata in un rifugio per proteggere i senzatetto dal virus. Si spera che queste iniziative servano a limitarne i danni.
Non c’è dubbio che la comunità gastronomica accuserà il colpo. Oltre a subire l’impatto immediato della chiusura per diversi mesi, i ristoranti situati in luoghi come Lima e Cuzco (per non parlare dei piccoli produttori che li rendono possibili), fortemente dipendenti dai proventi del turismo, dovranno trovare nuovi modi per sopravvivere. Nel suo insieme, la comunità del cibo peruviana dovrà trovare un modo per unire le forze, come ha fatto negli ultimi trent’anni, ma per il momento non ci sono risposte facili. Our “Buddy System” is a program dedicated to helping our American students and local Italian students meet and learn about another way of life through a frequent cultural exchange. Students from Prato and students from New Haven will be paired up at the beginning of each semester according to their personalities, interests and goals. The buddies will then be invited to participate with our students during the events and trips throughout the semester. It is our hope that regular contact with local Italians will help to integrate our students into the life and city of Prato while affording the Pratesi students to learn more about American culture. Below is a list of the activities available for the buddies to join during the semester.

Il “Buddy System” (da buddy, amico) è un progetto mirato a favorire le interazioni tra studenti americani e italiani permettendo loro di conoscere un diverso stile di vita attraverso frequenti scambi culturali.
All’inizio di ciascun semestre dividiamo i nostri studenti in gruppi e abbiniamo ciascuno di essi a un gruppo di studenti pratesi (i buddies) in base ai loro interessi, obiettivi e personalità. I buddies vengono poi invitati a partecipare con i nostri studenti alle attività e alle gite durante il semestre.
Crediamo che i contatti frequenti contribuiscano a integrare i nostri studenti nella vita della città di Prato e al contempo permettano agli studenti pratesi di imparare nuovi aspetti della cultura americana.
