Breakfast as It Is in Shanghai, Taipei and (Sometimes) New York
A classic fan tuan from A-Pou’s Taste in East Williamsburg, Brooklyn, filled with you tiao (a baton of deep-fried dough), rousong (shredded dried pork) and suan cai (preserved mustard greens).

In its simplest form, fan tuan is a slab of sticky rice, warm in the hand, longer than it is wide. It may be the size of a tailpipe, with a swirl of visible fillings ready to spill, or slender and sealed like a tomb, so no sign of what is buried within peeks out from either side.
At A-Pou’s Taste in East Williamsburg, Brooklyn, only one type of fan tuan is on offer, for $1.50. The owner, Doris Yao, who started selling potstickers from a street cart in 2010 and opened this modest restaurant a year and a half ago, may hand it to you herself.
It’s a hefty oblong, wrapped in a skin of plastic, with heat beating through it. The first bite is all rice. Only on the second do you hit treasure: you tiao, a baton of porous, unsweetened deep-fried dough; rousong, a woolly nebula of meat — here, pork — that has been simmered with star anise and ginger, shredded fine and dried nearly to desiccation; and housemade suan cai (pickled mustard greens), brightly sour.
This is breakfast, in Brooklyn as in Taipei, Taiwan’s capital, and Shanghai (where it’s called ci fan and molded into logs or rough orbs). The rice clings beautifully, and the cruller runs through it like an I-beam, keeping it stable and offering a counterpoint of crunch.
Often, the you tiao is a day old — it’s a smart way to use leftovers — and refreshed with a second round in the deep fryer. On a recent visit, it was stiff enough to require occasional gnawing. But this was a small price to pay to get to the sharp tang of suan cai and the rousong like carnal spun sugar.
Fan tuan has long been available in the Chinatowns of New York, although not always easy to find and mostly straightforward in construction. But two years ago, Nuan Xin Rice Roll opened in Sunset Park, Brooklyn, with a menu wholly devoted to variations on the breakfast snack.
The restaurant has since expanded with three more locations, two in Brooklyn and one, this month, in the Manhattan Chinatown — a block away from Jiang Xin Fan Tuan, which opened in March with the same mission and prices, $3 to $5 per roll.
In Taipei, fan tuan is a genre, treated much like Japanese onigiri or Mexican tacos, as a malleable vehicle for vegetables and protein. Modern versions there may be embedded with a whole tea egg or curls of cheese, or arrive sheathed in a scallion-flecked omelet.
At both Nuan Xin and Jiang Xin, the rice is purple, with a bruised ombre, and nuttier in taste than its white counterpart. It comes bound by nori, calling to mind a Japanese hand roll — less a matter of cross-cultural innovation than a nod to shared history: Nori entered the Taiwanese larder under the Japanese occupation in the first half of the 20th century.
Potentially more contentious is the mayonnaise squeezed into the rice. But this, too, is an ingredient true to Taiwan, where it is sweeter than in the West and slathered liberally on breakfast sandwiches. Nuan Xin uses Hellmann’s but adds secret seasonings, while Jiang Xin takes Kewpie from Japan and spikes it with fruit juice. Applied to the rice in daubs, alongside strands of iceberg lettuce, it brings an unobtrusive creaminess; more lavish and there’s a risk of glop.
Fortunately the mayonnaise is minimized or absent in the better rolls, whose contents could as easily be strewn over rice as encased in it: roast duck and braised pork gone louche in a pot with mei cai (dried pickled mustard greens) at Nuan Xin; hunks of chicken dark from long brooding in soy sauce at Jiang Xin.
The surprise is bacon, found at both spots. Suddenly the mayonnaise and iceberg make sense: This is practically a BLT, improved by its collision with salty-sweet rousong and sour pickled radish.
Still, I preferred the simpler fan tuan at A-Pou’s Taste and at Ho Foods in the East Village, where the chef, Richard Ho, started serving it for weekend brunch this past fall.
At $7, Mr. Ho’s is the most expensive — a testament to neighborhood rents, perhaps, but also to the care taken. The rice is white or purple mixed with white for extra stickiness and given a tinge of shallot oil. It isn’t ponderous, but spread as thin as a shell, just enough to contain the elemental fillings of twice-fried you tiao, rousong and pickled radish.
And that you tiao: It’s a small miracle, with a sharper crackle than any I’ve tried in Chinatown or China. Still crisp even in its cage of rice, it’s more puff than dough, a bronzing around air. Bite in, and it shatters.

Em sua forma mais simples, o fan tuan é um pedaço de arroz glutinoso, que fica quentinho na mão, mais longo do que largo. Pode ser do tamanho de um rocambole, com um redemoinho de recheios à mostra prestes a se derramarem, ou fino e selado como uma tumba, de modo que nenhuma pista do que do que está enterrado dentro dele apareça em nenhum dos lados.
No A-Pou’s Taste em East Williamsburg, no Brooklyn, há apenas um tipo de fan tuan à venda, por US$ 1,50 (cerca de R$ 6). A dona, Doris Yao, que começou vendendo guiozas em um carrinho de rua em 2010 e abriu esse modesto restaurante há um ano e meio, pode acabar lhe atendendo em pessoa.
O fan tuan é um rolinho robusto, enrolado em papel-filme, com calor pulsando através dele.
A primeira mordida é apenas arroz. Só na segunda você é premiado com um you tiao, uma massa porosa frita, sem adição de açúcar, em formato de cilindro; um rousong, uma nuvem de carne desfiada – nesse caso, carne de porco – que foi cozida lentamente junto com anis estrelado e gengibre, e desfiado fino e secado quase que completamente; e um suan cai caseiro (folhas de mostarda em conserva), com um amargor destacado.
Esse é um café da manhã no Brooklyn como se fosse em Taipei, capital de Taiwan, ou Xangai (onde ele é chamado de ci fan e moldado em formato de troncos ou esferas irregulares). O arroz se aglutina lindamente e a massa frita o atravessa como uma viga, o deixando estável e oferecendo um contraponto de crocância.
Muitas vezes, o you tiao é do dia anterior – um jeito inteligente de usar sobras – e renovado por uma segunda rodada na fritadeira. Em uma visita recente, ele estava duro o suficiente para precisar de uma roída ou outra, mas esse foi um preço pequeno a pagar para se chegar no gosto penetrante do suan cai e ao rousong como um algodão doce de carne.
O fan tuan está disponível nos bairros chineses nova-iorquinos há muito tempo, apesar de não ser muito fácil de ser encontrado e, em grande parte, mais simples em sua preparação. Porém, há dois anos, o restaurante Nuan Xin Rice Roll abriu suas portas no Sunset Park, no Brooklyn, com um menu inteiramente dedicado a variações desse lanche de café da manhã.
O estabelecimento desde então se expandiu para três outros locais, dois no Brooklyn e um, neste mês, na parte chinesa de Manhattan – a uma quadra de distância do Jian Xin Fan Tuan, que abriu em março com a mesma premissa, que cobra de US$ 3 a US$ 5 (cerca de R$ 12 a R$ 20) por unidade.
Em Taipei, o fan tuan é uma marca, sendo tratado no mesmo nível dos bolinhos de arroz japoneses ou dos tacos mexicanos, como uma maneira flexível de levar vegetais e proteínas na refeição. Algumas versões modernas de lá podem levar um ovo de chá inteiro ou cachos de queijo, ou até chegar revestido por um omelete salpicado com cebolinhas.
Tanto no Nuan Xin, quanto no Jiang Xin, o arroz é negro, em tom dégradé, e com um maior sabor de noz do que o da sua versão branca. Ele vem enrolado em nori, lembrando um temaki – mais uma questão de história compartilhada do que de inovação intercultural.
Potencialmente mais polêmica é a maionese no arroz. Porém, esse também é um ingrediente verdadeiramente de Taiwan, onde ele é mais doce do que no ocidente e espalhado generosamente em sanduíches de café da manhã. Nuan Xin usa Hellmann’s, mas adiciona temperos secretos, enquanto Jiang Xin traz Kewpie (marca de maionese) do Japão e mistura com um pouco de suco de fruta. Aplicado ao arroz em borrões, junto com tiras de alface americana, a maionese traz uma cremosidade que não atrapalha; se fosse mais exagerada correria o risco de virar uma gororoba.
Felizmente, a maionese é minimizada ou ausente nos melhores rolinhos, cujos recheios poderiam muito bem ser espalhados em cima do arroz ao invés de envoltos por ele: pato assado e porco refogado sumiram em um pote de mei cai (folhas de mostarda em conserva secas) no Nuan Xin; pedaços de frango, negros de ficar marinando em molho de soja, no Jiang Xin. A surpresa é o bacon, que aparece nos dois lugares. De repente a maionese e a alface fazem sentido: isso é praticamente um BLT melhorado pela mistura com o rousong salgado e doce e o azedo rabanete em conserva.
Do mesmo jeito, eu ainda prefiro os fan tuan mais simples do A-Pou’s Taste e do Ho Foods no East Village, onde o chef, Richard Ho, começou a servir de brunch nos finais de semana essa refeição no último outono.
A US$ 7 (cerca de R$ 28), Mr. Ho é o estabelecimento mais caro – um reflexo dos preços do aluguel na área, mas também dos cuidados tomados. O arroz é branco, ou negro misturado com branco para deixar ele mais empapado, com um toque de óleo de cebola. Ele não é pesado, mas espalhado fino como uma concha, só o bastante para conter os recheios fundamentais que são o you tiao frito duas vezes, o rousong e o rabanete em conserva.
E esse you tiao é um pequeno milagre, com uma crocância mais acentuada do que qualquer outra que experimentei nos bairros chineses ou na China, conseguindo se manter mesmo dentro de sua prisão de arroz. O you tiao é mais fofo do que massudo, chega a deixar o ar em volta com sua cor. Você o morde, e ele se desmancha.
