Conversamos con él y nos revela algunos aspectos que hace poco han hecho que se cuestionara la viabilidad a largo plazo del tipo de dieta que seguía hasta ahora.
Hola, David. ¿Qué tipo de alimentación defiendes y cómo has llegado hasta aquí?
Lo primero que quisiera aclarar es que no defiendo ningún tipo concreto de alimentación, sino que lo que propongo son alimentos saludables, en su mayoría crudos pero no una dieta en concreto. Defiendo una educación alimentaria innovadora basada en mi experiencia personal de más de veinte años recopilando conocimientos por todo el mundo. Este es el hecho definitorio y sorprendente de mis conferencias. Me inicié en el mundo de la alimentación cruda hace dos décadas, empecé comiendo así: muchos zumos verdes, aguacates, cantidades ingentes de verduras crudas … Y el aumento de energía que noté me transformó.
Así pues, ¿qué comes para desayunar, comer y cenar?
Es difícil responder porque depende de lo que tengo disponible en cada lugar y momento. Por ejemplo hoy mismo, lo que estoy comiendo es un concentrado de bayas salvajes de bosque de Finlandia con zumo de naranja. ¡Me da mucha energía! Y también plátanos y mucha uva. En estos momentos como mucha fruta y verduras básicamente. También me gusta mucho el té de chaga, una seta medicinal (Wolfe ha escrito un libro sobre sus extraordinarias propiedades) y chocolate (Wolfe argumenta que el cacao crudo es un superalimento en su libro).
¿Y cuándo sales a cenar fuera?
No salgo a cenar fuera; de hecho no suelo cenar mucho. Ayer, por ejemplo, comí algunos pepinos y tomates con aceite virgen de oliva. Básicamente, mi dieta es muy mediterránea.
¿Crees que una alimentación crudivegana o cruda es buena para todo el mundo? ¿Y durante todo el año, incluso en los meses de frío?
No, definitivamente no. Puede ser una gran herramienta para aprender, y ha sido una parte muy importante de mi vida. Pero hay nutrientes que obtienes de los alimentos crudos y otros que obtienes de alimentos diferentes. En cuanto al frío, hay muchos factores que intervienen en la generación del calor corporal de cada persona y no hay mucha gente que sea capaz de generar suficiente calor interno para aguantar todo el frío del invierno sólo comiendo alimentos crudos. Lo he aprendido al cabo de los años de experimentarlo.Cuando la temperatura exterior es de -20 ºC y sólo comía crudo y vegano, me calentaba con tés calientes (especialmente el que ya he comentado de chaga).

“I’ve learned that we cannot follow a strictly raw vegan diet forever”
Says David Wolfe, raw food and super food specialist.
David Wolfe is a communicating machine, emanating energy and optimism. With his penetrating eyes, warm voice and clear ideas, he is an authentic, world renown guru in raw food and superfoods. More than twenty years ago he decided to adopt a raw vegan diet and travel the world in order to find the healthiest way to eat. We are expecting Wolfe to fill the Centro de Conferencias de Badalona (Conference Center of Badalona) during the 21st and 22nd of November (tickets can be purchased online) with more than three hundred enthusiastic people. He will share with the audience the massive quantity of knowledge and experience that he’s accumulated. He will also present certain key aspects of health, well-being and longevity.
During our interview with him, he reveals certain aspects that not too long ago have caused him to question the long term viability of the type of diet he has followed up until now.
Hi David. What type of diet do you defend and how have you come to that point of view?
First, I want to clarify that I don’t advocate any concrete type of diet. What I propose is healthy food, mostly raw, but not a concrete diet. I advocate innovative food education based on my personal experience of more than twenty years compiling knowledge from all over the world. This is the definitive and surprising fact of my conferences. I started in the realm of raw food two decades ago. I started eating like this: lots of green juice, avocados and enormous amounts of raw vegetables… The increase in energy that I experienced transformed me.
So, what do you eat for breakfast, lunch and dinner?
It’s difficult to say. Really it depends on what I have available in each place I go. For example, just today I was eating wild forest berries from Finland with orange juice. It gives me a lot of energy! Also bananas and lots of grapes. These days I’m basically eating a lot of fruits and vegetables. I also really like Chaga tea. Chaga is a medicinal mushroom (Wolfe has written a book about its extraordinary properties) as is chocolate (Wolfe claims raw cacao is a super food in his book).
What do you eat when you go out to dinner?
I don’t go out to dinner. In fact, I don’t eat dinner very often at all. Yesterday, for example, I ate some cucumbers and tomatoes with extra virgin olive oil. Basically, my diet is very Mediterranean.
Do you believe a raw vegan or raw diet is good for everyone? All year round? Even during the cold months?
No. Definitely not! It can be a great learning tool, and raw food has been a very important part of my life, but there are nutrients that are obtained from raw foods and nutrients you can obtain from other foods. Speaking of cold, there are many factors that are involved in generating body heat, differing from person to person. Not many people are capable of generating enough internal body heat to withstand an entire cold winter solely on raw foods. This I have learned at the end of all these years experimenting with the subject. When the external temperature is -20°C and I only ate raw vegan, I warmed myself with hot teas; especially the Chaga tea I mentioned earlier.

Especially after my family move to Costa Rica and I attended a well rounded technical school where I specialized in tourism, hospitality, culinary arts and translation/interpretation. Later on we moved to Panama. Now I travel and study around Europe, Israel and soon Asia as well. All in all, I have a very international back round. I'm always learning new languages. This helps me to understand language and interpretation at a deeper level. Currently I am traveling and doing freelance translating and editing work.
I started my freelance translation business, OkeTranslations, after graduating 5 years ago. Since then I've been translating, writing, editing/proofreading, transcribing and interpreting a vast range of subjects for many different clients. I've also had the opportunity to live in Spain, Italy, Israel, Turkey and Eastern Europe. I've taught English and tutored Spanish and Italian.
